CSUS Commuter Pass Savings

I pay $35.00/month for unlimited use of public transportation through discounts available to civil servants. This saves $140 (March-June). Open University registration did not start until February, so I had to buy my February pass at work.

The normal cost of a monthly regional transit pass adds up to $100. So that amounts to a $500 savings (Feb-June) for most CSUS students.

CSUS Open University tuition this spring cost $640 for four credits ($160/credit).

So far, I have been able to reduce that by $150 (tuition reimbursement at work) + $140 = $290 (~45%). This does not include purchase of required books, which equals ~$150. So overall, ~37% in savings. Every little bit helps.

Feliz día de San Valentín

To Dawn. This year, I got her a Domo kun plush. We celebrated with a home-made Spanish-themed dinner:
  • Sweet corn cake
  • Spanish rice (with modifications: brown rice cooked in veggie bouillon; spices: crushed red pepper, parsley, cayenne pepper, ginger powder; corn, diced tomatoes)
  • Whole-wheat tacos with salsa, refried beans, Smart ground, and cheese

Chi Chi's Sweet Corn Cake Recipe

Dawn mentioned how she missed the sweet corn cake from the restaurant chain Chi Chi's tonight. Here is the recipe (other versions seem to substitute heavy cream and masa harina):

Chi Chi's Sweet Corn Cake
  • 1 cup all-purpose flour
  • 1 cup corn flour
  • 1/4 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 egg, beaten
  • 1 cup sour cream (can use non-fat)
  • 1/3 cup milk
  • 1/4 cup butter or margarine, softened
In a bowl, combine the dry ingredients. In another bowl, combine egg, sour cream, milk, and butter. Stir into dry ingredients just until moistened; pour into greased 8" square baking pan. Bake at 400 degrees for 20 to 30 minutes or until a toothpick comes out clean. Serve warm.
